This recipe is a take-off of one I had been using over a year ago for Almond & Hemp Milk Yogurt. It was a good one, but oh my, it is long and very detailed. This is a simplified recipe for straight up almond milk yogurt and a condensed version of the how-to's.
Short back story...
My three kids have always been allergic to dairy. For the past few years I have tried many different alternatives for them. We tried soy for a time but discovered that too much isn't healthy and really not good of developing boys, we tried goat milk but the flavor seems too gamy for them, and they love almonds.. so Almonds it is.
