Just something to roll around laughing about... My 5 year old daughter was using the potty the other day and i hear "OWW" when i ask what was wrong she hollars back to me " I TOOK TO BIG OF BITS". i just fell over laughing she thinks that not chewing your food good is what causes constipation.

This is a family recipe & tastes like apple pie (well, I actually make it like an apple cobbler!) but it has NO apples in it!! It is a GREAT way to serve zucchini to kids! I have even fooled adults with this when I have not told them what it is!! LOL:) It is also a wonderful way to use-up all that zucchini from the garden or when your neighbor gives you a bunch & you don’t know what to do with it!! =D …If you decide to make it, PLEASE get back to me how you liked it & if you fooled anyone?? LMBO:)

FILLING INGREDIENTS:
8 cups peeled & diced zucchini (I cut the zucchini in half lengthways & then hollow-out the seeds using just the small tips of a spoon on each half & then I cut thin slices to resemble apple slices!)

2/3 cup lemon juice (I usually use the ones shaped like a lemon from the produce section or I squeeze fresh, just depends on how lazy I am LOL:)

1 cup sugar

1 tsp. cinnamon

¼ tsp. nutmeg

CRUST INGREDIENTS:
4 cups flour

2 cups sugar

1 & ½ cups butter or margarine

Dash of salt

2 tsp. cinnamon

Well I am selling Cows...lol. Really, my cows collection to get Christmas gifts for my family. I am looking for a really nice Fishing Lure Bag, you know the kind that holds the lure boxes (at least 4 lg. boxes) for my husband, his old one is so worn out it's falling apart. My Grand daughter loves coloring books and I'm looking for one of those huge boxes of crayons for her too and she loves crazy socks...all kinds and colors, even the ones with the toes. I have a handicapped sister that loves horses so I'm always looking for any kind of horse items. Okay, guess that's about it for now. Hope you all have a great week and Happy Listiaing!!!!

About 15 years ago, our home was done in rustic decor & our kitchen was moo cows, so I know EXACTLY what you mean by parting with your cow collection! LOL:)
I still have some country/rustic pieces that we kept for staging houses (my hubby's a realtor) that I am planning to part with since I don't really want to take it with us when we move to another state. .... I still have a love for country & cows, since that's the way I was raised, I just don't decorate with or collect them anymore:)

And when my daughter was younger, she used to like those "toe socks" too! =D

Peach Snapple is my favorite...just tried the limited edition Mango Papaya but the peach is still best.Thank you for the kind words. I know God doesn't send any more than we can handle, but honestly I think He's trusting me too much~but I will get through it.

Punched-Up Iced Tea

We put a few handfuls of fruit (fresh or frozen & semi-thawed) in our magic bullet, give it a few whizzes until it pretty-much resembles baby food LOL:) You can use a blender also.
Sometimes we just mix 1 cp. pineapple juice & 1 cp. mango juice for a tropical iced tea.
Jim's fav is cherry tea. I make it by putting pitted cherries in the magic bullet for only a few whizzes:)
You can pretty-much use ANY fruit you want!!

Oh, & we double this recipe now bc it disappears too quickly!!

INGREDIENTS...

1 & 1/2 cups prepared white iced tea with your choice of sweetner (or regular iced tea works too! Again, with your choice of sweetner.)

2 cups of your favorite fruit juice

DIRECTIONS...

1.) In a pitcher, filled with ice, combine the white tea & fruit juice or juices.

2.) Stir well to blend & serve.

3.) Keep refrigerated.

Also does anyone know where to buy Poly-Vi-Sol with iron or Twin Lab Super B Complex (liquid without herbs)? I cannot find them at any local stores. These items I would prefer to buy in store and not online if possible as I need them now if I can find in store.

... DIRECTIONS for the yummy Polish Apple Pie recipe from above ...

DIRECTIONS:
1. Preheat oven to 375*.

2. Mix crust ingredients in a large bowl & set aside.

3. Cook zucchini in lemon juice on top of stove until tender.

4. Add 1 cup of the sugar, then cinnamon, & nutmeg.

5. Cook a little longer. Set the pot aside & add ½ cup of the crust mixture into the zucchini mixture in the pot to thicken it & then set it aside.

6. Using only ½ cup of the remaining crust mixture, pat it into a greased 9x13” baking dish. And bake just the crust for 10 minutes.

7. Remove from oven & pour the zucchini mixture over the crust & spread it evenly over the crust.

8. Put the remaining crust mixture on top of the zucchini. (I crumble it on for a nice crumbly topping.)

9. Sprinkle more cinnamon on top like you would for a pie.

10. Return it to the oven for 30 min.

11. Best served COOLED.

Today at the thrift store I found a Raggedy Ann for my Andy, so no longer need that...but still looking for a Pampered Chef mini whipper. Also please continued prayer for my husband and me...we cannot see each other until at least August 23rd and I found out last week that he might have melanoma. That's what my dad died from and I'm quietly freaking out. Thanks so much. Also, anyone who likes American Girl, I have a mini Kaya doll on auction.
