Spaghetti squash is a low carb vegetable. It's a very diverse squash that can be used numerous ways. I've stuffed it, broiled it, BBQ's it.. I even make a lovely coconut - spaghetti squash - custard pie that's yummy!
Spaghetti squash can even be frozen. Either cut it in chunks or scrape the inside out with a fork onto a cookie sheet. Spread evenly and freeze. It must be completely frozen before placing it in a freezer bag or storage container; otherwise, you're going to have iceberg a la spaghetti squash.
As like many squash, the blossoms are completely edible and are lovely tossed in hot oil, garlic or onion, salt and pepper. Also can be added to green salad. For a quick snack, I like to add them to a vegetable plate with various dips as like dill or ranch.
