The denomination makes this legal tender- that is: backed by the government, guaranteeing the weight and purity.
This is why American gold & silver Eagles sell for a higher premium than plain bullion.

Good question! I don't know.

My conspiracy theory speculation is that when the economy collapses the US government "knows" that real gold will go for this many dollars, or having a denomination will stop the catastrophic deflation at $5 per 1/10 ounce of gold (and we will go back to a gold standard). However, those are just my guesses...
