I have been growing these chicory in my garden now just starting my 4th year of growing them. These are the dried flower pods but I will.be crushing them and hand plucking the seeds out prior to.shipping. I have an abundant supply of these from 4-5 plants I grew this year in 2020 together. I am roasting four.roots on my woodstove to make chicory coffee/tea. So you may get 25-100+ seeds. You can use the flowers as edible salad garnish, decoration for cakes, cupcakes, etc. You can use the leaves as individual romaine.lettuce leaves or cut and come again salad or cook them like spinach when they get large. If you let some of the plants overwinter.they they will flower and go to seed the second summer/fall. You can cure.the seed plants and harvest flowers.and provide "bee food" all the way up untill October frost. I usually make several harvests of seed pods between August and September with the goal of getting some to cure on the plant before they get too wet from the weather.change. You can also use the roots at any point in time to make a "coffee replacer" which is really more like a tea, the longer you leave the plants the bigger longer and stronger the roots get for making chicory.coffee/tea. There won't be as much to the roots if your growing them for heads of lettuce as opposed to flowers. When it gets cold out and towards the end of the lifecycle of The plant The roots and leaves start to store vitamins minerals plant sugars and inulin a fiber that helps your body metabolize blood sugars and appetite control. Keto friendly. Basically you pull the roots from the ground knock the dirt off and or gently rinse the root and roast it open air style on a hot surface (I use my woodstove) and then store it open air dry. You can also mix the roasted & dried and chopped or ground root with the carefully dried and persevered flowers to make a beautiful herbal tea, which goes great with dehydrated apple bits from my tree.
