Carnival Squash

Cream colored with orange spots or pale green with dark green spots in vertical stripes. Carnival Squash have hard, thick skins and only the flesh is eaten. It is sometimes labeled as a type of acorn squash.

The delicious yellow meat is reminiscent of sweet potatoes and butternut squash and can be baked or steamed then combined with butter and fresh herbs. Also great in soups.

Prepare the soil in a garden bed located in an area that receives full sun. Each mature squash plant requires 25 to 36 square feet of garden space. Cultivate the soil in the garden area to a depth of 12 inches. Add at least 2 inches of compost and an organic fertilizer. Mix well and rake the soil until it is smooth and flat. The seeds will be planted in rows 5 or 6 feet apart. Some gardeners prefer to grow squash in hills. In this case, form one hill in every 5-by-5-foot or 6-by-6-foot area.

Plant the seeds when the soil is warm and all danger of frost has passed. Supply ample water to the squash seeds.

Carnival winter squash are ready to harvest about 85 days after germination. Usually they are harvested in late fall before the first heavy frost. If stored in a cool, dry area, the squash keep well.
