Interesting as I've ALWAYS added salt while my eggs were boiling....EVERY COOKBOOK TELLS YOU DO SO as this slightly helps eggs from cracking while cooking. There's no "one simple single" step that will prevent eggs from being difficult to peel. It all depends on numerous factors such as age of egg, type of pan eggs are boiled in, temperature of water and manner in which eggs are boiled and cooled. They should be put in a pan of cold water and and the temperature should be brought to a boil slowing by placing the pan on med heat and not hotter. They should be cooled immediately under running cool tap water. Additionally, it slightly helps by peeling eggs under running tap water. While eggs are safe to cook and eat for a long period of time, if they are too old prior to boiling, there is absolutely nothing you can do to make them easier to peel.
