This auction is for one brand new pack of 5" x 3" Index Cards. A great way to keep track of your recipes.

I recently was diagnosed with some serious health issues and I have started on a path towards a new way of living. Part of my search is for new and tasty healthy recipes. I thought that others might also be interested in them too.

So feel free to post your healthy recipes and read through and find new ones that you would like to try.

Tweeeeety!!!!! I don't know. Just wanted to comment with something... I still don't have any recipes to add. Sorry. I'm from a land of deep fried. LOL Although I despise fried chicken!! Growing up, people thought I was strange because I'd pick off all the outer layer crust and just eat the meat inside!! LOL

Reduced Sugar Banana Bread with Truvia Natural Sweetener
1 ¼ cup flour
3 1/2 Tbsp Truvia™ natural sweetener spoonable*
4 Tbsp sugar
½ tsp baking powder
½ tsp baking soda
½ tsp salt
¾ cup (about 2 medium) very ripe bananas; mashed
1/3 cup buttermilk
1 large egg
1/3 cup butter; melted and cooled
½ tsp vanilla extract
Non-stick cooking spray

* or 12 packets Truvia™ natural sweetener

1. Preheat oven to 350°F. Spray 9x5x3 inch loaf pan with non-stick spray.
2. Whisk together the flour, Truvia™ natural sweetener, sugar, baking powder, baking soda and salt in a large bowl. Set aside.
3. Mix the mashed bananas, buttermilk, egg, butter and vanilla in a medium bowl.
4. Lightly fold the banana mixture into the dry ingredients until just combined. The batter will be thick and chunky. Don't over-mix or your loaf will be small and tough.
5. Scrape the batter into the loaf pan. Bake about 55 minutes until golden brown and a toothpick inserted in the center comes out clean.
6. Cool in pan for 10 minutes; transfer to wire rack.
*This banana bread has 130 calories and 6 grams of sugar per serving, compared to a sugar-sweetened banana bread that has 160 calories and 14 grams of sugar per serving.

I have not read the comments yet, but I wanted to let everyone know I am so sorry I have not checked in for a bit. I am great (more or less). Last week was my kids last week of school and so they have a weird schedule for final exams and I get the opportunity to shuttle them to and from school all day. Also, I started an exercise routine that has been kicking my behind. You realize you are out of shape when you are tired walking across a soccer field and back. But I am up to about 15,000 steps a day now. I walk in the am and the pm and am doing some basic strength training too. I am sore, but not as sore as I was so I will try to be on listia more than I have been. This changing my enire lifestyle has just been a challenge. I can see how it will be good for me in the long run, but it is a bit disruptive here in the short run.
I miss you all and can not wait to get caught up on these amazing recipes. I will be working on it today but probably will not get through it all until tomorrow because I have a house full of children this week.

Broccoli Sala

One pkg of broccoli and only use the florets of it raw. Add shredded cheese to it as much or as little as u like any kind whaterver your preference. One red onion diced and added to the mix and cook and drain one pound of regular bacon or turkey bacon and crumble into the mix and then for the dress mix one cup of real mayonnaise light or fat free along with 2 tablespoons of white vinegar and a 1/2 cup of sugar and mix together all ingredients in one bowl. Best if served after letting it chill for a long time like about 5 or 6 hours but i like to make it the day before and let it get cold all night in the fridge and it gives all the flavors a chance to meld together. Enjoy!!!

Easy & healthy Chicken Noodle soup

4-1/2 cups low-sodium chicken broth
1 cup onion, chopped
1 cup carrot, chopped
1 cup celery,chopped
1 tsp. black pepper (unless you don't like pepper)
1 tsp. basil
1 tsp. oregano
1/4 tsp. black pepper
1 bay leaf
1-1/2 cups dried egg noodles
2 cups cooked chicken, chopped
(I also use canned chicken and cut in skillet in Pam spray)
Combine 4-1/2 cups low-sodium chicken broth, 1 cup each chopped onion, carrot and celery, 1 tsp. each dried basil and oregano, 1/4 tsp black pepper and 1 bay leaf; bring to boil.

Cover and simmer 5 minutes.

Add 1-1/2 cups dried egg noodles. Cover and simmer 8 minutes; discard bay leaf.

Add 2 cups chopped cooked chicken breast. Makes 4 servings.

Beats the heck out of high soduim canned soup~!

I am so sorry I have not been as active on this listing as I had initially intended to. With kids graduating and helping out my sister watch her kids and with the new health regiment. I have been wiped out. I want to thank all of you who have still been participating and I can not wait to try all these great recipes. I am going to be taking a little time off listia, but when I come back in August, I am going to do this again and make it really fun. So check back for some more healthy recepie ideas. :)

Layered Berry Parfait
Prep time 15 min Servings 6

INGREDIENTS:
2 cups fresh berries (sliced fresh strawberries, blueberries, black berries or raspberries
2 tablespoons honey
1 teaspoon grated lemon peel
1/4 teaspoon nutmeg
4 containers (6 oz each) low-fat yogurt
1 1/2 cups Kellogg's All-Bran Strawberry Medley Cereal

DIRECTIONS:
1. In a small bowl stir together berries, honey, lemon peel and nutmeg.
2. In six parfait glasses or dessert dishes layer yogurt, fruit mixture and cereal. Serve immediately.

I like the individual cards and I put them in an index card holder. Only recipes I really like make it from a cookbook or such onto a recipe card and into my file box. It just makes it easier to choose meals my family will eat.
I am starting a Heart Healthy and Diabetes Friendly file box. And I am hopeing to get some recipes from this auction that will help me fill it up. :)

Taco Soup (slow cooker recipe):

Prep: 15 minutes
Cook: 3 hours high, 6 hours low
Makes: 4 - 6 main dish servings

Ingredients:
1 lb lean ground turkey
3 c water
1 15 oz can red kidney beans, rinsed and drained
1 14.5 oz can Mexican style stewed tomatoes, undrained
1 10.75 oz can condensed tomato soup
1 1.25 oz pcg taco seasoning mix
crushed tortilla chips
shredded monterey jack cheese

Instructions:
1. In a large skillet cook ground meat until brown. Drain off fat.

2. In a 3.5 or 4 qt slow cooker combine meat, water, beans, undrained tomatoes, tomato soup and taco seasoning mix.

3. Cover and cook on low-heat for 6 - 8 hrs or on high-heat setting for 3 to 4 hours. Ladle soup into bowls. Sprinkle with tortilla chips and shredded cheese.

**We serve it over crushed tortilla chips.
