Harvest timeline: You can harvest the leaves once from plants you are growing for roots, just leave the two innermost leaves so that the plant will continue to grow. Beet greens grow fast in the spring, you can harvest baby greens within 21 days. Beet roots take between 6 and 9 weeks to form. I pick most roots while they are smaller. Smaller roots will be less fibrous.
Climate Info: Beets can be grown from very early in the spring until after the first frosts of fall. Light frosts don’t damage beet leaves. Heavy frosts will kill the tops of beet plants.
Additional Growing Info: Detroit Dark Red Beets are a common heirloom variety that produce beets between golf ball and baseball size. The green tops are red veined and are a healthy and attractive addition to salads and can also be cooked and prepared similar to spinach. If you are growing in a container or the garden tower, you will want to thin out the smallest plants and leave the one beet plant that appears to have the biggest, healthiest leaves. This process is known as thinning and you can use the “thinnings” or plants your removed in your salad mix.
