I hate to say it, but, you've misnamed your plant. Amaranthus doesn't produce flowers, or, leaves like that. True Amaranthus has large broad leaves used as a vegetable, and, thenoticably larger seeds are used as a grain by many cultures.

This looks like mullein verbascum which is used to make cough syrup. However, you are correct about the nearly microscopic seeds.
