Harvest young zucchini when they are 6 to 8 inches long and about 1 1/2 inches in diameter. Young zucchini are thin skinned and has immature seeds, and the fruit is crisp and tender, making them suitable for stir-fries or fresh salads. Skin and seeds toughen as the zucchini matures. I like them about 6” long, brushed with olive oil and grilled.
