LOL!! The peaches are great! Sweet & juicy!! Gonna order the cheesecloths I need for my peach juice for jam this week. I love to can. I just love putting up fresh food to feed my family once things are out of season. I have always loved canning & making jellies!!! Shoot, you should have been at 1 of our many pig roasts thru the yrs. He'd put that whole pig, split down the middle on the raised pit he made at about 11pm. They'd tap the keg at midnight.. cook it all night till about 2-3 the next day & we'd have a feast. At our home in Tn. if ppl went by & saw we were doing it again, everyone would stop cuz everyone was WELCOME!! Bring a dish to share & we'd have guitar players & horseshoes & the keg & ALL THE FOOD!! It was SO fun & a time to be with family & friends. We knew how to throw a pig roast!!! We were known for our pig roasts!!

This sounds like my house growing up..My Dad & Grandfather made a hawaiin BBq pit at the mountain cabin and if someone graduated from kindergarten then it was a wk-end fest..Now I am soooo homesick for the good ol days..Truthfully I hate cooking but I can pull off a great bbq for 200 on a 20 min notice but to feed my family of 5 was a chore..lol..I had so many cooks in the family back then but being up here it is just me so I throw a big dinner party or bbq just to make sure I remember how to do it..lol..old age memory issues..great party hosts like us are NEVER forgotten either trust me on that

Well, it wasn't done in the ground type of pit. He built a 3 sided pit with 2.8s & stretch fencing across the tip. That is what they would lay the pig on & keep coals going in a pile next to it so that they could be added gradually & cooked the pig very slowly. It'd take 4 men to flip it skin side up in last hrs of it but omg, I always got the ribs cuz it was my husband cooking & my house. lol!! Never ate any pork that good plus Phil made his own sauce the ppl wanted if they were throwing a pig roast. A gallon of his southern sauce was so good!! They used mob type things to spread the sauce on in last maybe 4 hrs.. SO GOOD!!
