Baby Choi is similar to Bok Choy but grows smaller(approx. 6") and has more tender stocks. The leaves can be used as greens or stir fried. The bulb can be split and cooked similar to fried brussells Sprouts. There are lots of recipes out there for the baby choi. These can be planted more densely than bok choy as well. Sow about 2 inches and thin to about 6 inches.
